COOKING INSTRUCTIONS:

  1. Bring a large pot of water to a rolling boil (it should look like a jacuzzi!)

  2. Add a generous amount of salt (it should take like sea water)

  3. Place a test noodle in the water and boil between 2-5 minutes (depends on thickness; consult your class instruction on timeframe)

  4. Once test noodles passes; add the remaining pasta

  5. Boil between 2-5 minutes

  6. If using a non-butter sauce, add the pasta directly to the saucepan (ensure to get a bit of pasta water to flavor the sauce). Mix in the pasta

  7. If using a butter sauce (i.e. sage and brown butter) place pasta on a plate and drizzle on the sauce (optional: finish with fresshly grated parmigiano reggiano
